
Finding the perfect brownie is hard! Some are too sweet, some are too floury, some have too little nuts and chips in them, and when I tried to bake them in the past, the brownies looked more like fudge…or puddles.
This is the perfect recipe. Slightly crusty on the outside, perfectly chewy, fudgy and gooey on the inside. Full of chips, nuts and chocolate crunch….heaven.

Makes 16 small (or 8 large) brownies
Ingredients:
100g dark chocolate (70%)
187.5g butter (3/4 of a 250g block)
3eggs
200g sugar
200g plain flour
a pinch of salt
50g chocolate chips (optional)
1. Preheat oven to 160 degrees C.
2. Melt chocolate and butter in a saucepan over low heat; set aside.
3. Beat eggs, sugar and vanilla till smooth. The children loved this part! Get them to take turns mixing.
4. Fold in the chocolate mixture, flour and salt until just mixed. Stir in the nuts and chocolate chips. Pour into prepared pan and sprinkle more chips, nuts and chocolate balls on top.
5. Bake for 30-40 minutes. Serve warm with plain vanilla ice-cream.
