  <body>Instant comfort and mood-improver! The children had 4 cups of milk to go with the cookies and we had to run away with the nuts and chocolate chips! The cookies were all sizes, from mini jumbo cookies, to mega jumbo cookies that grew to the size of a plate! 

The best part about the afternoon? Children getting so excited about kneading the dough that they were climbing onto the kitchen top to mix and get their hands dirty with dough....

Next time though, we'll make sure to tell them to aim for the cookies, not the floor when it comes to topping the cookies :)

Comfort food...made by Raffles Culinary Academy

INGREDIENTS
500g butter, softened
300g packed brown sugar
1 egg
500g plain flour
2g baking powder
2g salt
150g unsweetened chocolate chips
125g walnuts, pecans, peanuts, almonds or pistachios
1 teaspoon Vanilla essence


DIRECTIONS

1. Preheat oven to170 degrees C
2. Rub the flour, chocolate chips, nuts, butter, sugar baking powder and salt together until the dough is fine and crumbly. Use your fingertips for minimum stickiness.
3. Add vanilla essence to the egg and make a well in the dough. Crack the egg in and bring the dough together with minimum kneading
4. Drop by large spoonfuls onto baking paper. Add pecans, pistachios, more chocolate chips, peanuts and almonds
5. Bake for15 -20 minutes in the preheated oven.
