Gardenia Chicken Sandwich and Chocolate Chip Cookies

Last Saturday, 4 parent-child teams came down to The Little Arts Academy to cook and bond over chicken sandwiches and chocolate chip cookies. Mrs Suki and her daughter took the prize for best team and all participants took home a little certificate of participation. This recipe comes courtesy of 1827 Restaurant's Chef Kevin Kuang

For the chicken sandwich:

Ingredients
1 chicken breast
4 slices of bread, toasted
1 onion, chopped finely
1 green pepper, cut finely
1 tablespoon mayonnaise
1 tomato, sliced 0.3mm thick
lettuce leaves

1. Boil the chicken breast meat in chicken stock. Take it out when chicken cooked through.

2. Finely chop up the chicken breast and mix with onion, green pepper, mayonnaise and a pinch of salt. I dislike mayonnaise so I substituted this at home with low-fat cream cheese and it was delicious too!

3. You can choose to butter the toast (I prefer not to), then spread the chicken on the top. Add 2 slices of tomatoes and a lettuce leaf or two. Cut twice diagonally and serve as mini tea sandwiches

For the chocolate chip cookies:

Ingredients:

375g unsalted butter, room temperature
175g white sugar
100g light brown sugar
4 large eggs
10g baking powder
450g all-purpose flour
pinch of salt
1 1/2 cups (270 grams) semisweet chocolate chips

Preheat oven to 200 degrees C

1. In the bowl, cream the butter. Add the white and brown sugars and beat until fluffy (about 2 minutes). Beat in eggs, one at a time, making sure to beat well after each addition.

2. In a separate bowl, combine flour, baking powder, and salt. Add the dry ingredients to the egg mixture and beat until incorporated, adding the chocolate chips about half way through mixing.

3. Use a tablespoon to scoop out the dough and mould this with your hands, or use a piping bag to squeeze out perfect rounds. Our children got creative and made hearts, stars, starfish and squids out of cookie dough.

Bake about 12 - 15 minutes, or until golden brown around the edges. Cool completely on wire rack.

Enjoy with milk after the chicken sandwich and a good story...perfect activities for parents and children on rainy afternoons.
